Recipe For Healthy Eyes.
Eating a healthy and balanced diet with lots of leafy green vegetables such as Spinach, Broccoli and Kale can help maintain eye health.
A salad of dark leafy green vegetables offers a simple way to eat more lutein; one of the three macular carotenoids used in MacuShield®. With this in mind we have come up with a tasty recipe, rich in lutein, to help keep your eyes in tip-top condition! Enjoy!
Dark Green Salad with Honey-mint vinaigrette:
Ingredients
4 cups (1 litre) baby spinach leaves,
4 cups (1 litre) torn Romaine lettuce,
3 tbsp (45ml) cider vinegar,
1 tbsp (15ml) liquid honey,
1 tsp (5ml) Dijon mustard,
1/4 tsp (1ml) each salt and pepper,
1/4 cup (50ml) vegetable or olive oil,
1 tbsp (15ml) chopped fresh mint or 1 tsp (5ml) dried,
1 cup (250ml) sliced strawberries, raspberries, or blueberries, 2 kiwi fruits peeled and sliced.
Preparation
Whisk vinegar with honey, mustard, salt and pepper; gradually whisk in oil until blended.
Stir in mint (if using dried mint, let stand for 15 minutes). Add salad greens and toss gently until coated.
Divide greens between each of four salad bowls. Sprinkle with berries and kiwi. Drizzle with any dressing remaining in bottom of bowl.
Tip: Make a big batch of this dressing to keep in the refrigerator for up to two weeks to toss with greens anytime. Dried mint works best if you plan to keep the dressing.
